In 891, the village is mentioned for the first time under the name of Yebinesheim. The Thirty Years War and plague decimated the village. Jebsheim enjoys fertile pastures of the Alsatian Ried and agriculture is thriving. Jebsheim has become the biggest dairy producer department hosted a metallurgy industry.
