If there's one dish that symbolizes conviviality, celebration and sharing in Alsace, it's the Tarte Flambée (or Flammekueche). Contrary to its French name, it's not flambéed with alcohol (like a crêpe), but cooked "à la flamme". It's the dish par excellence for groups of friends and large gatherings.
But what is it?
The traditional tarte flambée is based on a trinity of simple but highly effective ingredients:
Bread dough rolled out extremely thin.
A base of heavy cream (or a mixture of cream and fromage blanc called Bibeleskaes), lightly seasoned with salt, pepper and a hint of nutmeg.
A generous garnish of smoked bacon and finely sliced onions.
