Sauerkraut may be the best-known Alsatian dish abroad, but Baeckeoffe is undoubtedly the Alsatian favorite for large family gatherings. Its name, which literally means "the baker's oven", tells a story of village solidarity and gourmet patience.
Baeckeoffe is a rich blend of three marinated meats: pork (a symbol of prosperity), beef (for strength of flavor) and lamb (traditionally associated with feast days).
These meats are cut into pieces and marinated for 24 hours in Alsace white wine (often Riesling or Pinot Blanc) with onions, garlic, leeks, carrots, juniper berries and cloves. The next day, the dish is arranged with alternating layers of sliced potatoes and marinated meats.
